Well, with all the fun and social activities comes a lot of eating and a lot of drinking. The calories have been adding up and I definitely lost all the progress I made, -which is really, really discouraging. BUT there's no point in looking back in the past and wishing what could've been, I'm going to be more on top of my diet game and hold myself accountable by posting at least twice a week with new recipes that I prepare for my meal preps!
Here's a chicken marinade recipe for all you college students on the go! It only requires 6 (or less) ingredients and I made this using my handy-dandy crock pot! Also, If you love horseradish, then Trader Joe's dijon mustard is the thing for you. It's freakin' delicious. Slather that on some chicken, steak, or roast beef and you've got me sold.
Here's what you'll need:
Honey Dijon Mustard Chicken Marinade
6 chicken drumsticks
1/4 cup dijon mustard
1/4 cup honey
2 tbsp balsamic vinegar
Add-ons
Shredded brussel sprouts (bag from Trader Joe's)
1/4 cup of cooked Freekeh (Costco)
Add in the mustard, honey and balsamic vinegar in a bowl and mix well. Season the drumsticks with garlic salt and pepper and place them into the crock pot first. Pour the mixture over the drumsticks and smother them with in marinade. Set to high and allow to cook for about 3 hours! To really reap all the juices and flavoring, I used the leftover sauce in the crock pot (and a little more mustard) and sauteed a bag of shredded brussel sprouts.
I also paired this dish with something I just discovered -Freekeh. It's a super grain that is packed with protein and can easily be healthier substitution for white rice and even brown rice. It has a very unique texture, it's definitely more moist than brown rice, -which I like and it's not as crunchy as quinoa. It's pretty much a fusion between the two.
OK all in all, this dish was seeping with savory, sweet and salty flavors, what more could you ask for?!
