I usually don't have much time to make lunch or dinner as I'm always on the go, to my next class, meeting, or study session. So this is a quick, easy and yummy meal I make either the night before or the morning of. What really saves me time is packing it all into a mason jar so I could just pack it into my lunch bag and have it ready to go. I usually place my ingredients from wet to dry -that way everything doesn't get all soggy; so dressing on the bottom, then arugula, butternut squash, and lastly, the chicken on top!
What you're going to need:
4 oz chicken breast seasoned with pepper
5 cubes of butternut squash -cut into smaller cubes

(I got mine in pre-cut microwaveable bags from Trader Joe's)
2 cups of arugula
1.5 tbsp of balsamic vinaigrette
2 cups of arugula
1.5 tbsp of balsamic vinaigrette
~230 cals
