truly guilt free brownies


I've obviously been enjoying spring quarter wayyy too much that I haven't even had the chance to update this for like 2 weeks! It's been a slew of events for me -from Coachella (which was an absolutely amazing experience btw), Spring Formals, to cancelled-class-days-turned-beach-days. Our labs and clinics have unfortunately been affected by a fire and this past week has been somewhat busy -in a fun way though!

But now I'm back and boy I've got a recipe that will literally make you thank God, Buddha or whichever spiritual higher being that you pray to! At only ~36 cals per brownie, you can't go wrong with this so indulge as you may. I stuffed myself with 4 pieces just now and I don't feel the least bit guilty.

Here's what you'll need:
1/2 cup steel cut oatmeal
1/2 cup unsweetened cocoa powder
1/2 cup Truvia sweetener
3/4 cup plain nonfat greek yogurt
1/4 cup almond milk
1 egg
1 tsp baking powder
pinch of salt

Preheat the oven to 400F. Combine all the dry ingredients and blend them in a blender/food processor. Then add in the wet ingredients and blend until smooth. Pour the batter into an 8x8 oiled pan and place into the oven for 15 minutes and that's it! I cut them into 9ths but its up to you how you want to divide it.

Just to add, the cocoa powder does make the brownies come off a bit bitter so if you want to make it more chocolate-y, I'd add some chocolate chips into the batter. It'll instantly make it sweeter and more rich. Hope you like them as much as I do.
