superfood: acai

Spring quarter is now in full swing and I have been right back to meal preppin' and what does that warrant? A trip to Costco, of course. Words can't explain how much I love Costco. It's everything from their cheap food court items, food in bulk and did I mention, SAMPLES?! I literally saved my stomach from lunch just so I could grab a few guilt-free bites.

But no really, Costco is a great place for college students, just because you can grab all the things you need in one place and you can get A LOT of it. This saves SO much time and money as you don't have to make multiple stops to the grocery store and buying in bulk is generally cheaper.

Here are a few items on my shopping list that I always buy:
Fruits (strawberries, blackberries, raspberries)
-Anything that you can't finish in time, just freeze it and use it for smoothies
Almonds
-This has become my favorite study snack, but be careful, they're pretty high in calories
Fish (salmon and tilapia) and chicken breast
-They come in filets so it's great especially if you're meal prepping for the week. Just store them
in the freezer and defrost when you need them

The one purchase I'm really glad I made was this Sambazon acai smoothie packet. This was actually my first time buying this, but I'v been eyeing it for a really long time just because I can't get a decent acai bowl here in Westwood and I've been wanting to make my own. Honestly, it tastes amazing and it's so easy to make.

Here's what you'll need:
1 packet of Sambazon acai smoothie pack
1/2 frozen banana
1/4 cup almond milk
Strawberries/blackberries/raspberries
Granola

Just blend together the packet of acai, banana, and almond milk until smooth. Then top it all off with your choice of fruits and granola!

Happy Easter Sunday,
Theresa
