After a week long break of binging off junk food and eating really, really bad (in both Hawaii and at home), I couldn't wait to get back on track and on my daily routine. I gotta say that as much as I enjoyed being on vacation and eating Vietnamese, home-cooked meals, I actually missed making my own meals and eating healthier. I mean, of course, I could've definitely resorted to those options while I was at home, but I was only back for what... 3 days? I had to take advantage of whatever Asian food I could have! Besides, I'm human too and I cheated pretty much this whole past week and that's okay! It only made me realize how much more energy I have and less lethargic I feel when making better food choices.
But the past is in the past and now I'm ready (and excited) to workout everyday and go back to having my daily bowl of fresh fruits and greens. I just got back from a really good gym session, which consisted of legs and cardio, and nothing satisfied my cravings more than some strawberries, granola (my fave) and yogurt!
This recipe is pretty self explanatory but it's yummy nonetheless.
Here's what you'll need:
1 cup nonfat greek yogurt
3-4 strawberries
Coconut flakes
Chia seeds
Granola
Happy Tuesday,
Theresa
